Don't know about tomtao chutney but I do have good recipe for aubergine chutney! Lovely pictures by the way ...

3 aubergines - chopped, not peeled
1/4 cup of extra virgin olive oil
2 onions chopped
2 cloves of chopped garlic
2 tablespoons of minced ginger
1/4 cup of molasses (can substitute maple syrup)
1/2 cup of brown sugar
1 teaspoon of cumin (ground)
1 teaspoon chilli powder
I cup white wine vinegar
juice 1 lemon
heat olive oil, add onions and soften.
add spices and cook for 5 minutes or so and then add chopped aubergine and stir
add molasses, sugar, garlic, ginger, vinegar and lemon and bring to boil. turn down heat and put lid on.
when aubergine starts to break down a bit take lid off and allow to simmer until it has thickened up (run a spoon through it like Moses parting the red sea - it should be liquid but slightly viscous)
personally, having just made a batch I would add more chilli, garlic and cumin. I like things quite heavily spicy so it is a matter of taste! Enjoy anyway :) Bxx
